One of the things I look forward to most at Christmas is the food! In my house our favourite is these Rocky Road Snowballs. They’re filled with festive cranberries, shortbread and marshmallows. I like mine covered in coconut, but if you don’t like coconut, just leave it off!
You will need:
- 75g Dried cranberries
- 50ml Cranberry juice (or water)
- 200g Mini marshmallows
- 160g Shortbread biscuits – bashed into crumbs
- 300g White chocolate
- 50g Butter
- 100ml Single cream
- 3 Tablespoons Golden syrup
- 100g Desiccated coconut
First of all you need to puff up the dried cranberries. Put them in a small bowl or cup and pour over the cranberry juice (or water). Pop them in the microwave for about 30secs-1min and then leave to cool.
Break up the chocolate and put it in a saucepan with the butter, cream and syrup. Heat this mixture up gently, stirring until it’s smooth.
Remove the pan from the heat and stir in the cranberries, marshmallows and shortbread crumbs. Leave to cool, then chill in the fridge for about 2 hours.
Spread out the desiccated coconut on a plate. Scoop up a large spoonful of the mixture from the pan and roll into a ball with your hands. (if the mixture is very sticky, rub some veg oil on your hands) Roll the ball around the coconut plate until it is totally covered and looks like a snowball!
Finally, take all of your Rocky Road Snowballs and place them on a plate. Pop them back in the fridge for about 2 hours or until firm.
These will keep in the fridge for a good few days, but they don’t normally hang around for that long! Rocky Road Snowballs are the perfect accompaniment to mulled wine or hot chocolate. I like to take one in my lunch bag to work as a little festive treat! Best of all, because they’re covered in coconut, you can pretend they’re energy balls!
